Hot Pot!

 
A necessity in the cold winter of MN. Usually this is cooked in an electric pot in the middle of the table, but our pot broke so we pulled our chairs to the stove to cook and eat in the kitchen!

Ice Shanties

 
Every post we have here is about outdoor activites in the cold! I guess those are the great things that you have to do in MN to make it through and enjoy the winter. Here we are at the "dice" shanties where you can take a seat at the booth inside and play the provided board games!
 
At another shanty you could climb a ladder to the 2nd floor and I took this picture of the good view. It was cold and windy out so we drank some hot chocolate and went to a shanty with a wood stove/sauna room! Good MN fun.

We went to an art sled rally at Powderhorn Park this weekend it was great winter fun! Here are a couple of the sleds. Go Snowman sled!

Scallion Pancake

 
Make the dough and wrap the scallion inside.
 
Cut in sections, then stretch, and twist.
 
Flatten the dough.
 
Fry the pancake. I like to fry and add an egg to it(and when the season is right add some fresh basil). I loved eating these in Taiwan from the street vendors. I thought that this recipe was pretty easy and the end pancake was nice layered and flaky just like I remember!

Loppet in Uptown

 

So last weekend was the City of Lakes Loppet cross-country ski festival for kids, adults and dogs! Uptown turned into a ski village. There also was a bike race on the frozen lake!
